Building gcc should not take hours on any relatively modern hardware. build-djgpp takes 33 minutes on an 8 year old CPU. And build-djgpp builds more than just gcc. It also builds binutils, a BSD libc and some other supporting libs. On 10 year old server hardware, you can build gcc, binutils, busybox, and the Linux kernel in about 15 minutes.

Do you have access to a multi-core machine? Are you enabling the -j parameter in make when possible? Have you considered using https://github.com/richfelker/musl-cross-make?
